EASY EGGS CASSEROLE
 

1 lb. ham or bacon, diced
1 med. onion, chopped
Frozen hashbrowns, 4-6
1 c. half & half
3/4 c. Cheddar cheese
12 eggs, or Eggbeaters
Salt
Pepper
Mrs. Dash seasoning

Thaw hashbrowns and squeeze out water. Line bottom of 9 x 13 inch pan with hashbrowns. Salt and pepper to taste. Sprinkle hashbrowns with ham or bacon (diced) and onions. Sprinkle 3/4 cup shredded cheese over hashbrowns. Beat 12 eggs and 1 cup half & half and pour over cheese. Bake at 350 degrees for 1 hour, let stand before serving. Can be made the night before and refrigerated.

BREAKFAST PIZZA

1 lb. bulk pork sausage
1 pkg. (8) refrigerated crescent rolls
1 c. frozen hash browns
1 c. shredded Cheddar cheese
5 eggs
1/4 c. milk
1/2 tsp. salt
1/8 tsp. pepper
2 tbsp. Parmesan

Fry sausage until brown. Drain. Separate crescents. Place on ungreased 12 inch pizza pan. Press over bottom and up sides, sealing seams. Spoon on sausage. Cover with thawed potatoes. Top with cheese. Beat eggs, milk, salt and pepper. Pour over all. Sprinkle with Parmesan. Bake at 375 degrees for 25-30 minutes. Serves 6.
