PORK CHOPS OREGANO
 

Large fry pan

6 lean pork chops
1 tbsp. olive oil
1 c. sliced onions
1 c. sliced mushrooms (optional)
1 clove crushed garlic
1 can lg. whole/crushed tomatoes
1 tsp. oregano
1 tsp. salt
1 tsp. pepper
1 tsp. parsley
1 bay leaf

In large frying pan on medium high, heat oil, onions and garlic. Simmer until onions are cooked. Add tomatoes and spices, let simmer for 10 minutes.

Add pork chops and let cook for 20 minutes; turn chops over and cook for another 15 minutes.

While meat is cooking, prepare remainder of meal. You can serve with peas over rice or mashed potatoes.

This can be done with most meats. If you like liver, this is exceptionally good. It really gives the liver a better taste.

It's also very tasty with fish and chicken.
