UPSIDE-DOWN HAM AND SPINACH QUICHE
 

1 (10 oz.) pkg. frozen, chopped spinach, thawed and well drained
1 c. diced cooked ham
1 c. grated Swiss cheese (about 4 oz.)
1/4 c. chopped onion
3/4 c. Nabisco cracker meal
2 tsp. baking powder
1/2 tsp. salt
1/4 c. butter
3 eggs
1 1/2 c. milk

Place spinach, ham, Swiss and onion in quiche pan or deep pie plate. Mix together cracker meal, baking powder, salt, eggs, and milk. Pour over mixture in pie plate. Top with small slices of butter. Bake at 350 degrees for approximately 1/2 hour or until golden brown.
