MOM'S BEEF COOKED IN BEER
 

6 to 8 lb. beef (chuck, neck, brisket)
1 lg. onion, coarsely chopped
5 to 6 cloves garlic
1 c. celery
4 lg. carrots, cut in 3 pieces
6 med. potatoes, skin on
Approx. 2 c. water
1 can beer
1 tbsp. salt
1 tsp. whole allspice
1/4 tsp. garlic pepper
Mrs. Dash extra spicy, to season

Trim fat from beef and cut into 3 x 4 inch chunks. Place beef in heavy duty roaster and cover with chopped onion, garlic, celery, carrots, whole potatoes with skin left on, water, beer and spices. Liquid should just cover meat and vegetables (adjust amount of liquid as necessary). Cover with tight lid and bake at 350 degrees for 3 hours in oven or simmer on top of stove for 2 1/2 to 3 hours. Test meat for doneness.
