MERRIE ROAST PORK LOIN
 

1 (3 lb.) rolled pork loin roast
1 (10 oz.) jar apple jelly
1/4 c. soy sauce
2 tbsp. salad oil
2 tbsp. lemon juice
2 cloves minced garlic
1/2 tsp. ginger

Place roast in glass baking dish. Combine remaining ingredients in a saucepan and cook over low heat until jelly is melted. Remove from heat. Pour sauce over meat and refrigerate 3 hours, turning meat several times. Remove from sauce and roast in a preheated 350 degree oven about 2 hours, or until meat thermometer inserted in the center of the roast registers 170 degrees. During roasting -- brush meat a few times with sauce. Let stand 10 minutes before serving. Serves 6.
