BRAISED LAMB SHANKS
 

3 to 4 lamb shanks about 1 lb. each
1/4 c. all purpose flour
1 tsp. salt
1/4 tsp. pepper
2 tbsp. olive oil
1/4 tsp. basil leaves
1/4 tsp. oregano leaves
1 c. cooked pearl onions

Mix flour with salt and pepper. Rub all over meat. Heat olive oil and add meat and brown on all sides.

Use stove to oven dish and place in oven at 350 degrees for 1 to 1 1/2 hours or until meat is tender. Remove from oven. Spoon juices over meat. Serve with wild rice or brown rice and a few fruit salad.
