GRILLED TOP LOIN STEAKS
 

Beef top loin steaks, bone-in or boneless, cut 1 inch thick
Salt and pepper

Place steaks on cooking grid over medium charcoal briquets; grill. When first sides are browned, turn and season with salt and pepper and finish grilling the second sides. Turn and seasons. Steaks cut 1 inch thick require about 12 to 15 minutes for rare, 18 to 20 minutes for medium. Figure on 3 servings per pound for boneless steak; 2 1/2 servings per pound for bone-in steak. Iron content per serving: 2.2 milligrams. Calories per 3 ounce serving: 185.
