1/3 c. olive oil 2 tbsp. minced fresh parsley 1 1/2 tbsp. balsamic or red wine vinegar Salt 1 tsp. minced fresh rosemary 1 garlic clove, minced Freshly ground pepper 2 (3/4 to 1 inch) thick T-bone steaks Blend the first 6 ingredients in a shallow pan. Add steaks, turning to coat both sides. Let marinate at least 1 hour. Prepare barbecue (medium-high heat). Drain steaks and sprinkle with salt. Place the steaks on the grill rack and cook to desired doneness, about 4 minutes per side for medium-rare. Serve immediately. 2 servings; can be doubled or tripled. |
