Make coulis. Grill steak, sirloin, top round or flank. Serve with Coulis spooned over sliced steak. RED PEPPER COULIS: 1/2 c. olive oil 6 sweet red peppers, cored, seeded, cut into 1/2 inch diced chunks 12 lg. cloves garlic, cut lengthwise in half 2 tbsp. basalmic vinegar 1 tbsp. sugar Pinch red pepper flakes Salt and pepper to taste 3 tbsp. finely chopped sundried tomatoes 16 whole basil leaves Heat oil in skillet at medium. Add red peppers and garlic and saute 15 minutes. Stir in vinegar and sugar. Add red pepper flakes, salt and pepper to taste. Cook uncovered stirring occasionally over medium heat for 15 more minutes. Stir in tomatoes and basil. Simmer 10 minutes. Serve hot. |
