Serves 4 (2 filled) tacos each. 1 pound firm tofu - drain and mash. I use a pastry cutter. Should appear sort of crumbly - like ground beef but not as stuck together. Saute in about 2 tablespoons of oil for about 10 minutes. I use a non-stick pan. If you don't have one you may need more oil to keep the tofu from sticking to the pan. You don't need to brown the tofu - which would require about 20 minutes. Then add a package of Ortega Taco Seasoning Mix and 1 cup water; simmer uncovered 15 minutes, stirring occasionally. If you use a different brand mix following their instructions for making the taco filling, except use the tofu as prepared above.
While the filling is simmering, chop some tomatoes, lettuce, cucumbers and any other veggies that strikes your fancy (black olives, celery, peppers). Grate some Cheddar cheese. Put about 3 tablespoons filling in a taco shell and top with cheese. Heat in 350 degree oven for 5 minutes. Then top with veggies and sour cream or avocado or whatever you like. Be creative - if you have the time. The basic taco takes about 35 minutes and will serve 4 people.
