This is a Cuban recipe which has been a favorite in our family since we tried it. It's easy to make and delicious. 1/4 c. olive oil 1 lg. onion 3 cloves garlic 1 green pepper 8 oz. can tomato sauce 1 c. frozen peas 1 tsp. salt 1 bay leaf 1/2 c. dry wine 1 can red bell peppers or 2 bell peppers, roasted
Cook beef whole in stewing or soup pot. Extract after thoroughly cooked String beef using two forks until beef is all reduced to string - like segments. Slice onion and chop green pepper. Crush garlic and fry in hot oil with onion. Add green peppers and fry a little further. Add remaining ingredients (except peas and red pepper). Cover and cook over low heat for 15 to 20 minutes, stirring occasionally to avoid sticking. The red pepper and peas should be added 5 to 10 minutes before serving and - or used to decorate. Serve with rice and a salad. Serves 6 to 8.
