MAMA MAXWELL'S SON'S FAVORITE DINNER
 

1 lb. mozzarella cheese, shredded
Parmesan cheese
1/2 lb. scarmoza cheese, sliced
3/4 lb. provolone cheese, shredded
1 lb. ricotta cheese mixed with 2 eggs
1 1/2 lb. ground beef
Spaghetti sauce (homemade or 1 lg. & 1 sm. jar Ragu, thinned)
1 pkg. lasagna noodles, cooked as directed on box

To use home made sauce, add to sauce recipe, one more can of tomato sauce and a little water.

First, using lasagna pan pour little of the sauce on the bottom of the pan and then put one layer of the noodles, (overlapping the edges a little) in the bottom of the pan. Use about 1/3 of your cheeses, spreading them over the noodles beginning with the ricotta cheese and ending with Parmesan. Then a layer of sauce, a generous amount. Continue until you end with a layer of noodles topped with sauce and Parmesan cheese.

If the pan is real full, be sure to cover the bottom of your oven with foil to catch the grease. Cover with foil and bake at 350 degrees for 1 hour or until you are sure the lasagna is hot all the way through.

Serve with garlic bread and salad and light dessert like ice cream with sugar wafers or a Jello dessert. Serves 6-8 people.
