MEATBALLS
 

1 1/2 c. stale italian bread
1 med. size head of garlic, peeled and chopped
3/4 to 1 c. Italian parsley, chopped
Salt and pepper to taste
1 1/2 lbs. ground beef
1 1/2 lbs. ground pork
1 egg
3/4 to 1 c. grated locatelli cheese
Lard for frying (can use oil instead of lard)

Soak bread in water until crust peels off. Squeeze bread to remove excess water. Peel entire head of garlic and chop each clove into small pieces. Mix all ingredients together. Roll mixture in hands and shape into meatballs. melt lard over medium heat (DO NOT USE CRISCO OR BACON FAT). Oil may be used in place of lard. Fry meatballs until brown. N.B. This recipe makes a delicious meat loaf. Served with a tomato sauce.
