2 lbs. flank steak 3 med. onions 3 green peppers 7 cloves garlic 6 bay leaves 1/2 c. white vinegar 1/2 can tomato paste 2 ripe tomatoes Salt & pepper to taste Boil steak with 1 onion (sliced thinly), 3 cloves of garlic (sliced thinly), 1 green pepper (sliced thinly, 3 bay leaves, 1/4 cup vinegar and salt until tender. Reserve some broth. Cool, then strip meat into pieces. Fry remaining onions, pepper and garlic in 2 tablespoons of olive oil. Add meat, 3 bay leaves, 1/4 cup vinegar and small amount of broth (from boiled steak). Simmer until liquid is absorbed. Stir in tomatoes, chopped coarsely and tomato paste, heat through. Serve with black beans over rice. |
