1 lg. duck 1 tsp. ginger 1 c. ketchup 2 tbsp. soy sauce 1 lg. jar marmalade Rub inside of duck with ginger; then prick skin. Cook on spit 30 to 35 minutes per pound. One-half hour before the duck is done, baste with mixture of the remaining ingredients. Watch carefully because grease dripping from duck tends to flame up. |
