MAIN DISH STIR FRY
 

1 lg. onion
1 lg. green pepper
2 lg. green tomatoes
1 lb. lean beef
5 lg. carrots, sliced thin
2 stalks celery
1 tsp. peanut oil
Dash of salt and pepper
1/2 c. soy sauce

Slice onion, green pepper, green tomatoes, celery, carrots very thin. Brown lean beef; set aside. Saute onion, green pepper, and tomatoes. Add soy sauce and carrots, salt and pepper. Then add lean beef; cover and simmer for 5 minutes. Serve over brown or white rice.
