MAINE SARDINE FRITTERS
 

1 can sardines
1 egg, separated
3 tbsp. flour
Milk
Salt and pepper

Drain sardines. Mix flour with salt and pepper. Add egg yolk and enough milk to make a smooth batter. Beat thoroughly. Beat egg white and fold into batter. Take a sardine on spoon, dip into batter and fry on both sides in a little fat.
