TACO PIE
 

1 lb. ground beef
1/2 c. chopped onion
1 env. taco seasoning mix
4 oz. can chopped green chilies, drained
1 1/4 c. milk
3/4 c. Bisquick baking mix
3 eggs
2 tomatoes, sliced
1 c. shredded cheddar cheese
Sour cream for topping (opt.)
Tomatoes for topping (opt.)
Lettuce for topping (opt.)
Cheese for topping (opt.)

Heat oven to 400 degrees. Grease pie plate, 10" x 1 1/2". Cook and stir beef and onion until brown; drain. Stir in seasoning mix. Spread in plate and top with green chilies. Beat milk, Bisquick and eggs until smooth, 15 seconds in blender on high or 1 minute with hand mixer. Pour into pie plate. Bake for 25 minutes. Top with tomatoes and cheese. Bake until set, about 8 to 10 minutes. Cool for 5 minutes and top with sour cream, tomatoes, lettuce and cheese if desired. Serves 6 to 8.
