PIG'S STOMACH
 

1 cleaned pig's stomach
1 1/2 lbs. ground sausage
1 lb. bacon
4 c. diced potatoes, raw
1 onion, chopped fine
2 c. shredded cabbage
1 c. diced carrots, raw
Salt and pepper to taste

Fill cleaned stomach with stuffing which has been mixed thoroughly. Place on rack in roasting pan and bake at 350 degrees for 3 hours. Take off lid for last half hour for browning.

NOTE: Mixed stuffing can be put in casserole and baked, but is flavored better stuffed in hog maw. (These can be purchased from your grocery or butcher shop in the fall.)
