PORCUPINE BALLS
 

1 lb. ground beef
1/2 c. uncooked rice
1 tsp. salt
1/4 tsp. pepper
1 tbsp. fat
1/2 med. onion, cut up thin
1/2 green pepper, cut up thin
2 1/2 c. tomato juice

Mix ground beef and uncooked rice, salt and pepper together. Add dash of chili powder and mix well. Form in balls 1 1/2 inches in diameter. Place in covered baking dish. Then in skillet, melt the 1 tbsp. fat. Saute onion, green pepper, tomato juice in this. Pour over porcupine balls and place in a 350 degree oven and cook for 1 1/4 hours. They are done when rice is tender and the rice shows through like porcupine. Makes 8 servings.
