2 c. diced, cooked roast beef, ham, veal, pork, lamb, chicken or turkey 3 c. diced, cold potatoes 1/2 c. minced onion 1/2 tsp. salt 1/8 tsp. pepper 1/3 - 1/2 c. milk or half and half 4 tbsp. butter Ketchup, chili sauce or horseradish In large bowl, combine first 6 ingredients. In 12" skillet, cook mixture in hot butter over medium heat for 20 minutes or until crusty and brown, stirring occasionally. Serve with desired sauce. Optional Seasonings: One tablespoon minced parsley, green pepper or sweet pickle relish. |
