HOLUBKY-STUFFED CABBAGE (CZECH)
 

1 head cabbage
1 tbsp. cooking oil
1 onion, chopped
1 lb. ground beef
1/2 lb. ground pork
2 c. cooked rice
1 egg
1 tbsp. salt
1/2 tsp. pepper
1/2 tsp. paprika
1 (10 oz.) can tomato juice

Preheat oven to 325 degrees. Prepare cabbage by cutting deeply around core to loosen leaves. Place in boiling water about five minutes. Remove. Separate leaves and set aside.

Heat oil in skillet. Add onion and cook until golden brown. Place onion in a large bowl. Add ground beef, ground pork, rice, egg, salt, pepper and paprika; mix well. Place about 1 heaping tablespoon meat mixture in center of each leaf. Roll, then tuck in ends. Place rolls side by side in shallow baking dish. Pour tomato juice over. Cover dish. Bake two hours. Makes about 8 servings.
