HANOVER BRISKET
 

4 or 5 lbs. beef brisket
1 (10 1/2 oz.) can beef consomme
1 (5 oz.) bottle soy sauce
3/4 c. lemon juice
1 tsp. minced garlic
1 tbsp. liquid smoke
1/2 c. barbecue sauce or use the barbecue sauce listed below

Combine consomme, soy sauce, lemon juice, and garlic. Pour over meat and marinate overnight. Place roast and liquid in 300 degree oven. Cover. Roast for 1 hour per pound. Pour barbecue sauce over brisket the last hour of cooking time. Increase oven temperature to 350 degree and continue to roast for 1 hour uncovered. Slice across the grain.

BARBECUE SAUCE:

1/4 c. chopped onions
4 tbsp. sugar
1/8 tbsp. pepper
1/4 c. catsup
3 tbsp. vinegar
1 tbsp. Worcestershire sauce

Mix together and cook over low heat for 5 minutes.
