POLLO GUISADO
 

1 chicken, cut up
1 celery stalk, chopped
1/2 of a lg. bell pepper, chopped
1/2 of a lg. onion
1 sm. can tomato sauce
Salt & ground black pepper to taste
2 c. water

Boil chicken, debone and shred. In a skillet, spray Pam and saute chopped celery, green pepper, and onion. Add shredded chicken, tomato sauce, and seasonings to sauteed mixture. Add approximately 2 cups of water or enough to cover mixture. Bring to a rapid boil, then simmer until most of liquid has been absorbed. Serve "Taco Style" using either corn or flour tortillas. Left over chicken can be easily frozen for later use.
