POLISH STYLE STUFFED CABBAGE ROLLS
 

1 1/2 lb. ground beef
1 can sliced beets
1 can sliced carrots
1 lg. onion
1 c. rice
1/2 jar catsup
Salt and pepper
1 can water
1 lg. head cabbage

Cook rice as per package directions, set aside. Core cabbage and cook in covered pan with small amount of water, about 5 minutes to soften. Drain and peel apart leaves. Blend raw ground beef and cooked rice together, add salt and pepper to taste along with 1/2 of the onions. Take a small amount and wrap in leaf of cabbage, then roll in larger leaf. Place in baking pan. Continue until done using all cabbage. Place sliced beets with juice and sliced carrots with juice onto cabbage rolls. Add sliced onions, pour catsup and add a little water. Sprinkle with salt and pepper. Cover pan with foil. Bake for 1 1/2 to 2 hours at 400 degrees.
