You can use a can of Veg-All or any canned vegetable, actually, any vegetables can be used in this combo dish.
Mash the peas. Grate onions, potatoes and carrots. Mix together with eggs. Mix in the matza meal. Mix in seasoned bread crumbs, if desired. Form into pancakes. Fry in vegetable oil, for crust, about 4 minutes each side. Bake in hot (about 325-375 degree) oven for about 1/2 hour.
