CHICKEN HAM SUPREME
 

4 chicken breasts, split/boneless
4 slices of ham (lunch meat style-not ham steaks)
1 egg
1/4 to 1/2 cup bread crumbs (Italian) or use flour
salt and pepper to taste
4 tomato slices
1/2 cup mozzarella cheese
brown gravy (canned, mix, or homemade) - follow directions for canned or mix)

Coat the chicken breasts with egg and breadcrumbs (or flour). Deep/Pan fry the coated breasts in hot peanut oil (or your choice of oil -- basically, we are making fried chicken here).

Prepare Gravy:

Place chicken on plate and top with ham, tomato, cheese and brown gravy (in this order).

Microwave dish just long enough to melt cheese (this may not be necessary with the chicken and gravy being hot.)

Salt and pepper to taste.

Serves 4 (multiply for more people).
