1 c. canola oil 1 c. sugar Scant 1 c. brown sugar, non-packed, very important 2 eggs 1 tsp. vanilla 3 c. whole wheat pastry flour 1 tsp. baking soda 1 c. old fashioned oatmeal 1 1/2 c. raisins Cream thoroughly oil and sugars. Add eggs one at a time, mixing thoroughly. Add vanilla. Mix. Combine baking soda into flour. Add to creamed mixture in small portions, thoroughly mixing up after each addition. Mix in raisins and oats. Bake 10 minutes at 350 degrees. Fat: Negligible. Oil: 1 tsp. per cookie. |
