1 lb. fish fillets 2 tbsp. lemon juice 1/4 c. water 1 tsp. salt 1/8 tsp. pepper 1/8 tsp. paprika 1/4 tsp. parsley Place a 10x16 inch browning bag in a 10x16 inch dish. Place fish in a single layer in the bag. Combine remaining ingredients in a bowl. Pour over fish. Close bag with a rubber band. Make six 1/2 inch slits in the top of bag. Microwave 4 to 5 minutes, turning dish after 2 minutes. Serve with cucumber sauce. Serve 2 to 3. CUCUMBER SAUCE: 3/4 c. diced and peeled cucumber 1 tbsp. lemon rind 2 sliced green onions 1/2 c. mayonnaise 1/4 tsp. dill weed Combine all ingredients, blending well. |
