MARINATED LOIN OF PORK
 

2 lb. pork loin, trimmed
1 can light beer
1/2 c. apple juice
1 1/2 tsp. thyme
1 tbsp. brown sugar
1/2 tsp. black pepper

Preheat oven to 400 degrees F. Combine ingredients for marinade in a shaker container. Pour over the pork loin in a shallow pan. Cover. Refrigerate for at least 30 minutes. Drain marinade and save. Roast meat at 400 degrees F. for 20 minutes. Reduce heat to 325 degrees F. and continue roasting for 1 1/2 hours. Pour some reserved marinade over the meat at 30 minute intervals. Meat is well done when thermometer registers 170 degrees F. Allow meat to cool for 20 minutes. Slice and serve.
