2 tbsp. unflavored gelatin 1/2 c. cold water 2 c. boiling water 1/4 c. cider vinegar 1/4 c. lemon juice 1/4 c. unsalted tomato juice Artificial sweetener to substitute for 1/2 c. sugar 1 c. cabbage, shredded 1 c. celery, diced 3 tbsp. pimento, chopped 3 tbsp. green pepper, chopped Soak the unflavored gelatin in cold water until dissolved. Add the boiling water, vinegar, lemon juice, tomato juice, and sugar substitute. Cool until mixture begins to thicken. Fold in the chopped vegetables. Pour into 1/2 cup molds and chill until ready to serve. Makes 8 servings. |
