12 c. hard pears, peeled and chopped into chunks 2 c. cider vinegar 6 1/2 c. sugar 1/3 to 1/2 c. ginger root, shredded or chopped 1 sm. box preserved candied ginger, cut up fine 3 cloves garlic, minced 4 hot chili peppers, minced 1 lemon grated 3 c. seedless raisins 1 c. shredded onion 1 tsp. salt Mix first 3 ingredients. Bring to a boil. Boil for 9 minutes. Add remaining ingredients; bring to boil. Cook 30 minutes, uncovered. Pour into small sterilized jars. Cap. |
