BLACKBERRY PRESERVES
 

2 1/2 c. sugar
1/2 c. water
2 qts. ripe berries, washed

Mix sugar and water in an enamel pot and bring to boil. Add berries, bring to boil, and cook 1 minute or so. Remove from heat, cover, and cool overnight. Return to stove and cook at high temperature. Bring to boil and cook rapidly until berries are plump and shiny, about 3 minutes. Remove from heat, pour into sterile jars, and seal. Makes 6 to 8 cups.
