8 qts. tomatoes, peeled 2 qts. chopped carrots 2 lg. heads cabbage, shredded 1 red pepper, diced 1 green pepper, diced 2 bunches celery, chopped 1/2 c. salt 1 tsp. pepper 2 qts. water Combine ingredients and boil 1 hour in open kettle. Fill sterile jars; seal and boil in hot water bath for another hour. Makes about 12 to 14 quarts. |
