HONEY AND CINNAMON-CANDIED YAMS
 

6 lg. yams
2 tbsp. cold water
1/2 tsp. cinnamon
1 1/2 tsp. grated lemon rind
1/4 c. orange juice
6 tbsp. butter
1 1/2 tbsp. cornstarch
1 1/2 c. honey
1/2 tsp. nutmeg
1 tsp. salt
2 tsp. lemon juice

Heat oven to 375 degrees. Butter a large ovenproof casserole. Scrub and cook yams in boiling salted water until tender. Peel the yams and cut them in half lengthwise. Place the yams in the prepared casserole.

Dissolve the cornstarch in cold water. Combine the honey, cinnamon, nutmeg, lemon rind, lemon juice, orange juice, and salt in a saucepan; bring to boil. Add the cornstarch mixture. Cook over medium heat, stirring constantly, until the mixture is thick and clear; remove from heat.

Add the butter; pour mixture over yams. Bake for 15 minutes.
