About 2 3/4 lbs. when purchased will yield about 1 1/2 lbs. thinly sliced squash 1 1/4 c. grated Swiss cheese 1 tsp. salt 1/2 tsp. pepper 3/4 c. heavy cream
Place slices of squash in tap water and boil 3-4 minutes, then strain.
Butter a gratin dish and place a layer of squash, half of the cheese, butter and salt and pepper. Make a second layer as the first. May be done ahead at this point. Place in a 400 degree oven for 30 minutes, then add 3/4 cup of cream.
Return to oven for another 10 minutes. Rest at room temperature for 10-15 minutes before serving.
