BEEF AND BEAN ENCHILADAS
 

1 lb. ground beef
1 onion, chopped
3 c. refried beans (best if used homemade)
1 pkg. taco seasoning mix
2 cans tomato sauce or enchilada sauce
Pitted olives, optional
1 to 2 pkgs. flour tortillas
2 c. cheddar cheese, grated
Garnishes if desired: olive slices, sour cream, salsa, guacamole

You may substitute shredded beef or cooked chicken.

In frying pan brown ground beef, drain. Add taco seasoning mix according to directions and onions. Simmer for 10 minutes. Add refried beans and olives, and 1/2 can of tomato or enchilada sauce. Heat until bubbly. Pour 1/2 can tomato sauce in bottom of 9 x 13 inch pan. Place a good spoonful of beef and bean mixture in each tortilla, roll up and place seam side down in pan. Pour remaining tomato sauce over all, top with cheese. Bake uncovered at 350 degrees for 15 to 20 minutes. Garnish as desired.
