DILLY BEANS
 

2 lbs. string beans, trimmed
1 tsp. cayenne pepper
4 heads dill
2 1/2 c. water
2 1/2 c. vinegar
1/4 c. salt
1 tsp. celery seed
1 tsp. dill seed
1 tsp. mustard seed
1 med. sliced onion
6 lg. stalks celery, cut to size of beans

Pack beans lengthwise into hot jars. Add celery stalks and sliced onions. Leave 1/4" head space. To each pint add 1/4 teaspoon each: cayenne pepper, celery seed, dill seed and mustard seed and 1 head dill. Pour boiling hot mixture of water, vinegar and salt over beans, leaving 1/4" head space. Adjust caps. Process pints 10 minutes in boiling water bath. Let stand 2 weeks allowing flavor to develop. Yield: about 4 pints.
