CURRIED FRUIT AND NUT SALAD
 

1 head red leaf lettuce
11 oz. can mandarin orange sections, chilled and drained
1/3 c. white wine vinegar
2 tbsp. packed brown sugar
1 tsp. soy sauce
1 c. torn fresh spinach
1 c. grapes, seeded and halved
1/2 c. slivered almonds
1/2 c. salad oil
1 clove garlic, minced
2 tbsp. minced chives
1 avocado, peeled, seeded and sliced (Haas)

In salad bowl, combine lettuce, spinach, orange sections, grapes and almonds. In screw top jar, combine salad oil, vinegar, garlic, brown sugar, chives, curry powder and soy sauce. Just before serving, toss some of the dressing with the salad. Garnish with avocado. Pass remaining dressing. Makes 8 servings.
