CHICKEN IN BEER BATTER
 

Just as beer drinking is the custom in Germany, beer often replaces wine in the cooking of food. 1 tsp. salt 1/4 tsp. black pepper 1 c. flour 2 eggs 1/2 to 1 c. beer 2 tbsp. melted butter 2 tbsp. minced parsley Oil or fat for frying

Season the chicken pieces with the salt and pepper. Make a smooth mixture of flour, eggs, and melted butter. Then add as much beer as necessary to make a smooth, rather thick batter. Add the minced parsley. Coat the chicken pieces with the batter and let chill 1 hour in the refrigerator. Heat the oil to 375 degrees and deep fry the chicken until golden brown. Drain and place in a shallow baking pan. Bake in a preheated 350 degree oven for 30 minutes or until tender. Serves 4.
