TOMATO ZUCCHINI ITALIAN
 

4 lb. tomatoes, peeled, cored and quartered
2 lb. zucchini, cut in 1/2 inch pieces
1/2 lb. onions, quartered and sliced
2 lg. green peppers, seeded and cut into 1/2 inch squares
1 tbsp. MSG
4 tsp. Italian seasoning
1/2 tsp. garlic powder
4 pkg. instant chicken flavored broth

In a large kettle combine tomatoes, zucchini, onions. Bring to a boil. Reduce heat and simmer 20 minutes, stirring often. Add remaining ingredients. Place kettle immediately in a sink filled with ice water. Stir frequently, adding more ice to sink as needed. When tomato mixture has completely cooled, spoon into 6 (1 pint) freezing containers, leaving 1/2 inch headspace, seal and freeze. Makes 6 pints.
