SWISS CHEESE AND BACON QUICHE
 

8 slices bacon, cooked and crumbled
2 tbsp. grease drippings
1 med. onion, chopped
4 eggs
1 c. heavy cream
1 c. milk
1 tbsp. flour
1/2 tsp. salt
1 1/2 c. Swiss cheese, shredded
1 frozen pie shell

Cook chopped onion in grease drippings. Beat eggs and combine cream, milk, flour and salt into bowl and mix. Add Swiss cheese and mix in onion and bacon. Bake a pie shell for 5 minutes at 400 degrees. Pour mixture in and bake at 325 degrees for 45 to 50 minutes. Serves 8. Cover crust with foil if it begins to brown too much.
