GRILLED GROUND GREEK KEBABS
 

Preparation time: 10 minutes. Grilling time: 6 to 8 minutes, preheated broiler. Serves: 4.

1 1/2 lbs. lean ground beef or lamb or combination
1/2 sm. onion, grated or finely minced
1/2 c. minced parsley
1 tsp. salt
1/2 tsp. pepper
3/4 tsp. each cinnamon & cumin
1 egg white, beaten
Olive oil
Green or red pepper, cubed

YOGURT DIP:

1 c. plain nonfat yogurt
1 tbsp. olive oil
1 tsp. lemon juice
1 lg. clove garlic, pressed
1/4 tsp. salt
1/2 tsp. seeded, chopped cucumber

1. Mix together the meat, onion, parsley, salt, pepper, cinnamon, cumin and egg white.

2. Knead with the hands until the mixture is smooth and pasty.

3. Shape mixture around 8 (9 inch) skewers, forming into balls or sausage shapes. Brush with oil. Place pieces of green or red pepper at each end of skewers.

4. Grill over charcoal or in broiler. Turn as the meat browns, broiling about 3 to 4 minutes per side or until done to your liking.

5. Mix together the yogurt dip. Serve with the meat.

Good served with: Rice pilaf, pita bread and tomato and onion salad. Serve with a red wine, if desired.
