DUTCH BABY OR OVEN PANCAKE
 

3 eggs
1/2 c. milk
1/2 c. flour
Dash of salt
2 tbsp. melted butter, plus extra for pan
Jam or jelly for topping

In a large bowl, beat the eggs. Add the milk and beat well. Stir together flour and salt. Put into sifter and sift into egg mixture, whisking constantly until completely smooth. Add 2 tablespoons melted butter. Pour batter into buttered, deep 10 inch skillet. Bake at 450 degrees for 15 minutes. Reduce oven heat to 350 degrees and bake an additional 10 to 15 minutes. Cut into quarters to serve.
