Tripe Beef feet Beef neck Hominy (white) Las Palmas red chili sauce (lg. can) Oregano Menudo mix Onion Lemon Cook feet and neck for 1 1/2 hours. Clean fat off tripe. Cut to desired size. Cook in separate pot. Add feet and neck to tripe. Cook for 45 minutes. Add hominy and chili sauce. Sprinkle menudo mix and oregano. Cook for 30 minutes more. Serve with lemon, onion, and oregano. |
