GRILLED SALMON STEAKS
 

6 fresh or frozen salmon or trout steaks
1/2 c. cooking oil
1/4 c. snipped parsley
1/4 c. lemon juice
2 tbsp. finely chopped onion
1/2 tsp. dry mustard
1/4 tsp. salt
Dash of pepper
Lemon wedges

Thaw frozen fish. Place fish in shallow dish. Combine all ingredients, except lemon wedges and pour over fish. Marinate, turning occasionally 2 hours at room temperature or 4 to 6 hours in refrigerator. Drain, reserving marinade. Place fish in well greased wire broiler basket. Grill over medium-hot colas until lightly browned, 5 to 8 minutes. Baste often and then turn. Grill until fish flakes easily when tested with a fork, 5 to 8 minutes. Serve with lemon wedges. Serves 6.
