SALMON FILLETS
 

Flour to coat
1/2 oz. olive oil and butter
2 oz. white wine
1/2 c. chopped tomatoes
1/4 c. chopped olives
1/4 c. shallots
1 oz. capers, anchovy, parsley

Flour fish. Add fish to pan with oil. When fish is done add the rest of ingredients and simmer.
