These basic directions can be used anytime you want to steam fish. Juice of 1 lime 1/4 c. shallots, minced Fresh ground black pepper to taste
1. Arrange fillets on a steamer rack over boiling water.
2. Squeeze the lime juice over them, and top with shallots and black pepper.
3. Cover and steam for about 5 minutes, until fish flakes easily with a fork. Makes 4 servings.
