SALMON LOAF OR PATTIES
 

1 (14-16 oz.) can salmon, drained
1/4 c. soft bread crumbs (easy in blender)
2 eggs, beaten
1/4 c. melted butter
Salt & pepper to taste
1 tbsp. chopped parsley (opt.)

Flake salmon with a fork, add beaten eggs and mix well. Mix in remaining ingredients. Put in a greased loaf pan. Bake at 350 degrees for 40 minutes. PATTIES: drop by spoonfuls in size desired onto lightly greased (Pam is fine) hot skillet, approximately 325 degree electric skillet setting. Brown on each side, turning only once.
