BASIC PAN FRIED FISH
 

2 lbs. fresh fish fillets, steaks or pan-dressed whole fish
Salt
Pepper
1 egg
1 tbsp. milk or water
1 c. dry bread crumbs, cracker crumbs, cornmeal or flour

Cut fillets into serving size portions. Sprinkle both sides with salt and pepper. Beat egg slightly and blend in milk. Dip portions in the egg mixture then roll them in crumbs. Place fish in heavy frying pan with about 1/4 inch melted fat, hot but not smoking.

Fry at a moderate heat until fish is brown on one side. Turn carefully and brown the other side. Cooking time is approximately 10 minutes depending on the thickness of the fish. Drain on absorbent paper and serve with lemon wedges or sauce. Makes 4 to 6 servings.
